Fermentation is one of the first food preservation methods utilized by ancient people. Kombucha is the beverage the ancient Chinese called the “Immortal Health Elixir”. It has reportedly been around for more than 2,000 years.
Kombucha is made from sweetened tea that’s been fermented by a Symbiotic Colony of Bacteria and Yeast (SCOBY). The SCOBY is also sometimes called “mother” because of its ability to reproduce, or “mushroom” because of its appearance.

Things To Keep In Mind
Take it slow at first. Eating probiotic foods can be a bit of a shock to your system if you’re not used to them. Start with small amounts and gradually increase your servings over the period of several days.
If you are addicted to soda, Kombucha is a great cold and bubbly alternative to break that habit. It’s fun to drink in champagne glasses for something festive.
